MINI MINCE PIES
INGREDIENTS – MAKES 12
350g quality mincemeat
225g plain flour
2 table spoons caster sugar
125g unsalted butter
1 large egg, beaten
Milk to glaze
METHOD
1. Lightly a 12 hole muffin tin. Tip the mincemeat into a bowl and stir.
2. To make the pastry, place the flour, sugar and butter into a bowl and mix thoroughly (using a hand mixer or food processor) until the mixture resembles breadcrumbs, then slowly add the egg while continuing to mix.
3. Bring the pastry together with your hands, wrap in cling film and chill for around an hour. Once chilled, roll out the pastry, cut out 12 circles to fill the muffin tin moulds, then fill with your mincemeat.
4. Cut out 12 smaller star shapes (with a shape cutter – or you can use circles) and place on top to cover the mincemeat, brush lightly with milk. Chill for about 30 minutes.
5.While chilling, preheat the oven to 200° C. Bake the pies for 20 minutes, until they are golden brown. Enjoy!
