These will be two of the main cuisines inspiring chefs and winging their way to a menu near you.

These will also feature heavily – look out for hybrid fusion menus and pop-ups aplenty.

From film to fork

2015 is the year of blockbusters – Star Wars, Terminator, Independence Day, Fantastic  Four, The Avengers and Pirates of the Caribbean all come out in the summer and will heavily influence event themes and food trends

Self-service bars for guests to ‘construct’ their own dishes with an array of sauces, toppings and seasonings

More events are taking place before the working day begins, menus will feature exciting new breakfast and brunch options

Indulgent or healthy, British or heavily influenced by international cuisines; anything goes with the breakfast menu – as long as it is the talking point

Reduced food miles and food produced for social good. Chefs will work more closely with producers to ensure responsible sourcing – and they’ll be shouting about it
