Recipe of the month – Salted caramel walnut brownie recipe

I’m very passionate about my brownies. I’ve been making them since 41 Portland Place first opened last year. We served them at one of our opening events and they proved to be the most ‘talked about’ topic of the evening. For months, everyone has asked me for the recipe so here it is…

How to make the brownie:

250 grams dark chocolate (plus extra to decorate)
265 grams salted butter
600 grams caster sugar
5 free range eggs
250 grams self raising flour

How to make the salted caramel walnuts:

500 grams caster sugar
250 grams walnuts
2tsp flaked sea salt

Method:

1) Melt the chocolate and butter together slowly, stirring frequently
2) Allow to cool slightly
3) Stir in the sugar
4) Beat the eggs into the chocolate mix
5) Fold in the self raising flour
6) Put aside while you make the caramel
7) To make the caramel, spread the sugar in a wide base pan and slowly caramelise over a low heat. Do not stir
8) When the sugar liquid goes a nutty brown colour  remove from the heat. The next steps must be done quickly before sugar sets
9) Pour half the caramel in to a lined baking tray and pour the brownie mix over the top
10) Bake at 150oC for 1 hour 15 mins checking after 45 mins
11) Add the nuts and salt to the other half of the caramel and spread out on to a greaseproof lined baking tray
12) Leave to cool at room temperature until hard
13) When hard pulse in a food processor until crumbed
14) The brownie is cooked when it has a hard outer crust, but if shaken it has a firm wobble.  This results in a soft brownie
15) Remove from the oven and leave to cool before transferring to the fridge overnight to firm up.
16) To serve, brush the brownie with a little melted chocolate and sprinkle over the crumbled caramel nuts
17) Slice into 12 bars and serve.  Once decorated do not store in the fridge as the caramel crumble will absorb moisture and go soft
