Recipe of the month – BBQ Pork Belly

This lip-smacking BBQ recipe is a true taste of the season and a guaranteed crowd pleaser.  It is super simple allowing you to sit back and enjoy that G&T!

INGREDIENTS

1 kg Pork Belly

1 tsp Chili flakes

4 Large garlic cloves

110 g of Soy sauce

170 g Brown sugar

1 tsp Peppercorn

1 tsp Salt

METHOD

Combine the all ingredients to make the marinade in a big bowl and mix until the sugar is dissolved.

Slice your pork belly into strips and place in a plastic freezer bag, pour in your marinade and ensure you cover all sides completely. Seal and place in the fridge, marinate the pork belly for a few hours or, better, overnight.

Arrange the marinated pork belly slices on a grill rack and place it on the middle rack of the oven.

Bake the each side at 180°C for about 20 minutes while basting the meat with the remaining marinade every 10 minutes.

Finish on the BBQ for that perfect smoky taste for about 5 minutes per side, serve up and enjoy!
